

I am always trying to find ways to substitute healthier options into my kids’ favorite meals. This definitely delivered! They LOVE these Pancakes and I can eat them without feeling gross and weighed down like I do with normal pancakes. We add chocolate chips to half of them (Marc doesn’t like chocolate chips in his pancakes 🙄).
Rather than topping them with traditional syrup, I make homemade strawberry 🍓 syrup. All I do is cook frozen strawberries on the stove and add a little honey for sweetness. It’s SO GOOD 😊
FOR THE PANCAKES:
- 2 1/2 cups rolled oats (BLENDED; makes them turn flour-like
- 1 tbsp cinnamon
- 2 tsp baking powder
- 1/2 tsp salt
- 1tsp vanilla extract
- 2 cups almond milk (or milk of your choice)
- 2 eggs
- 2 tbsp honey for sweetness (optional)
Mix everything together and let it for a few minutes to thicken. Cook as you would for normal Pancakes 🥞 and ENJOY!
