Healthy and Delicious Dinner In a Pinch

I am sharing this recipe because it is one of my absolute favorites for so many reasons!

It’s QUICK

It’s EASY

It’s HEALTHY

It’s DELICIOUS

INGREDIENTS (serves 4):

1lb chicken breast (cubed)

Organic frozen 🥦 Broccoli

4 Sweet Potatoes 🍠 peeled and cubed

1 sliced red onion 🧅

1 cup dried cranberries

DIRECTIONS:

Preheat oven to 425

Place aluminum foil on baking sheet (optional for easy clean up) and drizzle with olive oil.

In a bowl, toss all ingredients with olive oil, sea salt, fresh ground pepper, and Italian seasoning.

Spread the ingredients onto the baking sheet and bake, uncovered, for 25-30 minutes.

I like to stir the ingredients after its done and broil it for an additional 2 minutes.

VOILA! That’s it!
