🌾PROTEIN OAT PANCAKES🌾

When I first read this recipe, the inclusion of Greek Yogurt threw me off. I have made oatmeal pancakes, a different way, before…. But never like this.

I’m so glad I followed the recipe and tried these because they’re not only so good for you, but they were DELICIOUS.

The kids and I ate them right up and the best part is that they didn’t leave me feeling weighted down and stuffed like I do when I eat “normal pancakes”

To top this morning’s batch, I made strawberry syrup and it was the perfect compliment since I added dark chocolate semi-sweet chunks 🍫

To make the syrup, I add Frozen Organic Strawberries to a saucepan and simmer with Organic Cane Sugar (sweeten to taste preference).

Or ratio reference, I used about a cup of Strawberries and 1tbsp of Cane Sugar today

If you try this recipe, please let me know your thoughts on it! The BIG TRICK is to let the batter sit for a little while after blending it to allow it to thicken.

INGREDIENTS:

3/4 cup nonfat plain Greek yogurt
1/2 cup nonfat milk (I used coconut milk)
2 cups old-fashioned oats
2 large eggs
3 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup mix-ins of choice: toasted chopped nuts chocolate chips, blueberries
