Easy and Healthy Meal Prep Lunches!

Chicken and veggies!

Every Sunday, I cook 2 lbs of chicken in the crock pot with a little chicken broth, garlic, sea salt, fresh ground black pepper, and Italian seasoning.

I shred it and use it for various things throughout the week.

For lunches throughout the week, I add that chicken to a bed of veggies that I broil after tossing in olive oil, sea salt, garlic powder, and fresh ground black pepper. 👌🏻

Separate them meal prep containers and you’re done!  I usually freeze my later-in-the-week meals so they don’t go bad and I don’t have to prepare anything else for Thursday and Friday (I’m always extra cautious not to eat chicken after three days from being cooked).
