
So, this dinner was a combination of a few recipes because as I had one thing in mind, I realized I was out of multiple things I needed to make it 🤦🏻♀️
So glad, though, because this meal was delicious!!!
@cleanfoodcrush is one of my absolute favorite places to find good recipes that are GOOD FOR YOU.
The base of the dinner was from Rachel’s BBQ Shrimp + Limey Avocado Salsa Meal Prep Bowls
MODIFICATIONS I MADE:
I cheated for the BBQ shrimp and used BBQ sauce, honey, salt, pepper, and garlic powder to cook the shrimp.
I then made a sauce using orange juice, honey, garlic, salt and pepper in a saucepan. Bring to a boil, then sit aside. I actually added that to my rice as it cooked to give it flavor. We also drizzled a little of it over the whole dish.
I also added cucumbers and fresh oranges to the salsa, which was a nice addition 👌. I used red onion instead of green ones.
The broccoli was cooked on the stovetop with salt, pepper, garlic and a little lemon drizzled on it. Deeeslicious!!!
