Cauliflower Rice Chicken Taco Bowls

This dinner is one of my favorites (as a bowl or a taco)! Itโ€™s so easy, so delicious, and HEALTHY. A huge bonus is that my kids LOVE it, too!

Ingredients:

1lb chicken ๐Ÿ”

32 oz organic chicken broth

Organic Taco Seasoning ๐ŸŒฎ

Corn off the cob ๐ŸŒฝ

Cooked Black Beans

Avocado ๐Ÿฅ‘ (sliced)

Fresh Salsa

I start by cooking 1lb chicken in a pot with organic chicken broth seasoned with a little sea salt, pepper, and Italian seasoning. It basically boils for most of the cook time, then the chicken soaks up the broth and adds so much flavor to it as a base!

I make this type of chicken for a lot of my meals because itโ€™s so versatile. Once the chicken is cooked, I shred it with two forks before adding about 3/4 cups water and Organic Taco Seasoning.

**All of my grocery items come from either @amazonpantry or @walmartpickup. I couldnโ€™t survive without them ๐Ÿ˜ (well, I probably could, but Iโ€™d much rather spend quality time with my boys after work rather than grocery shop, so I love these options!).

While the chicken is cooking, I cook the cauliflower rice in a pan with olive oil, sea salt, pepper, garlic, and a little organic taco seasoning (to taste) for extra flavor.

I also cook black beans (already cooked/softened) and corn off the cob mixed together in a pot and seasoned with the same ingredients as the rice, minus the taco seasoning.

Once the cauliflower rice is cooked and soft, I turn up the heat to take some of the moisture away and make it more rice-like, stirring often to prevent it from burning.

Layer the three items (cauliflower rice, beans and corn, and chicken) in a bowl and top with avocado slices, fresh salsa, and shredded cheese…. YUM!!!!

My boys love taco shells, so they make theirs as traditional tacos with a hard shell, but layer all of the same ingredients in it.
